I want to eat this every day of the week…
Quite often I run into “lean and healthy” salad recipes that turn out to be pretty heavy and rich in calories. That’s not the case with this one!
Most of the time it has to do with adding mayonnaise to the recipe. This chicken salad recipe uses light plain yogurt instead, which makes it much leaner right from the beginning.
You could also add turkey instead of chicken, or get your chicken from the rotisserie to save time! You might want to substitute pineapple for the apple or add some of your favorite nuts to get a dose of healthy fats. It really is up to you and this salad is going to be delicious, however you tweak the recipe!
2 cups diced cooked chicken
1/4- 1/3 cup light plain yogurt
1 apple, diced
3 stems of celery, sliced
1/4 cup raisins, craisins or any other small dried fruit
dash of salt, pepper, dried parsley and onion powder
dash of lemon juice
Add all ingredients, except lemon juice and yogurt, in a bowl – toss to combine. Add some lemon juice and stir, coating the apples. Add in yogurt and stir until well combined. Season to taste.
