I am a major fan of scalloped potatoes but my husband is not. he prefers mashed. However, my dear husband LOVES sweet corn. So, I decided to make him a little something special that would satisfy the both of us…scalloped corn casserole! This recipe is great and turned out amazingly well, not to mention, my husband LOVED it.
