From time to time, I like to surprise my family with a batch of cookies. I do this probably twice a month. This time I decided on these butter cookies and they couldn’t be any easier to make. I would never have guessed that you use a box of cake mix in this recipe. The cookies come out wonderfully with the perfect crumb. If you haven’t tried these cookies yet now is as good a time as ever.
These cookies truly are easy to make. My family loves them just as they are but I think the next time I will use a different cake flavor for the sake of experimentation.
Ingredients
1 box Duncan Hines butter recipe cake mix
1 stick Kerrygold butter
1/4 tsp McCormick vanilla extract
1 pkg Philadelphia cream cheese @ room temp (8 oz. pkg)
1 Eggland’s Best egg
Instructions
1. Combine all ingredients with electric mixer until well blended. Chill dough for 2 hours.
2. Roll into balls (about walnut size). Roll balls in powdered sugar.
3. Bake on ungreased cookie sheet in 350-degree oven for 10 – 12 minutes. Dust with powdered sugar when completely cooled.
