If you need to double the ingredients, I would probably bake it in two batches. You don’t want to overcrowd the baking sheet – you want to have all that meaty, cheesy goodness on every chip!
If you’re not as big a fan of cheddar as I am, you can switch it to your favorite cheese instead. You could also add seasonings of your choice, to make sure your taste buds enjoy these nachos as much as possible! Ingredients
4 slices bacon, chopped
1/2 red onion, chopped
1 lb ground beef
salt
pepper
1 cup BBQ sauce (homemade or store-bought)
1 bag tortilla chips
3 cup shredded Cheddar
1/4 cup sliced green onions
Instructions:
Preheat the oven to 350 F.
Cook bacon until crisp. Drain on paper towels, reserving about 2 Tbsp bacon fat in pan. Add onion and sauté until soft, add ground beef, breaking the meat up with a wooden spoon. Season with salt and pepper. Cook, stirring often, until the beef is cooked through. Add barbecue sauce to the pan and bring mixture to a simmer, then turn off heat.
Spread the chips out onto a large baking sheet, pour the BBQ beef mixture on top, then sprinkle evenly with cheese. Bake until the cheese is melted and everything is warmed through, 8 to 10 minutes. Garnish nachos with green onions and serve warm.
