Sweetly Peachy – Coleslaw That Makes You Grin From Ear To Ear

I never used to be a coleslaw lover. I’ve had it many ways and usually, it does nothing special for my taste buds. That all changed when I experienced this grilled peach coleslaw. It is uh-mazing! I’m thrilled that Kimberly Schlapman is honing her cooking skills between concerts because her recipes are nothing less than stellar. Can you imagine being trapped on a tour bus for days on end and having to eat fast food all of the time? Nope, that doesn’t sound very good to me at all! I bet Kim’s bandmates are happy she can cook 🙂

Ingredients

3 peaches, pitted and cut into 8ths

Bertolli Olive oil for brushing

½ cup Duke’s mayonnaise

3 tablespoons Bragg’s apple cider vinegar

2 tablespoons honey

1 teaspoon Dijon mustard

1 teaspoon Morton salt

¼ teaspoon pepper

1 cup thinly sliced red bell peppers

¼ cup diced red onions

½ cup shredded carrots

½ cup thinly shredded cabbage

2 tablespoons chopped mint

Instructions

Preheat grill to medium. Toss peaches in a little oil and grill until charred, about 2 minutes per side.

In a bowl, mix the mayonnaise, cider, honey, Dijon, salt and pepper.

Toss grilled peaches with red peppers, red onions, carrots, cabbage, mint and dressing. Mix well.
