My friend told me a Czech family had invited them over for BBQ when they had gotten to know them at a campsite. Apparently potato salad is a very common side dish there, and every family has their own traditional recipe that they may not want to reveal to anyone! Fortunately, this family was more than willing to share theirs so that we can now enjoy it. This really is the perfect side to most any BBQ entree – and I wouldn’t mind having this alone for lunch, either!
I added some smoked ham but you could easily change things up by using leftover chicken, sausage, or even tuna!
Ingredients
8-9 med potatoes boiled in their skins
4 hard cooked Eggland’s eggs
smoked ham, cubed (optional)
2-3 small carrots
2 dill pickles
6 tbsp chopped parsley
2 celery stalks, chopped
salt and pepper
Dressing
2/3 c Hellman’s mayonnaise
2 tsp Dijon mustard
juice of 1 lemon, or to taste
Instructions:
Boil potatoes until tender. When potatoes are cool enough to handle, peel skins off.
While cooking potatoes hard cook eggs and steam carrots until tender. Finely chop vegetables, pickles, eggs and parsley. If you decide to use smoked ham, chop it into small cubes.
Whisk together dressing and pour over potatoes. Add remaining ingredients and place in fridge until cool.
