Every weekend throughout the summer, our house has people at it. We put in a swimming pool a few years ago, and that’s just how it’s been ever since. We knew that it was going to happen as soon as we put the pool up. My kids always have friends over, or we have our own friends over. It’s something that we love. The more the merrier I say. Usually, when our adult friends come over, we end up having a BBQ too, just because eating is one of our favorite things to do… I think it’s everyone’s! Haha. So I used to ask that they bring something to pass, but now they just do it out of habit.
One of the Saturdays in the sun, my friend Jenny brought this corn salad over and it blew me away. I’m usually not a huge corn fan, but this stuff was out of this world delicious. I think I had three helpings!
I was sure to have her write the recipe down, which she said she found on Recipe Lion, before she left. She told me not to worry about making it if she was coming over though, because she would keep bringing it from now on. Music to my ears I tell ya.
