This slow cooker chicken ranch casserole is perfect to serve to friends if you have a dinner gathering of some sort. It’s inevitable that sometimes when we meet our friends unexpectedly, the first thing that comes to mind is “Hey, I’m inviting you to dinner so we can catch up”. And this is the perfect thing to serve. It’s cooking while you’re preparing the house. Plus, this casserole is super easy to make so your houseguests will be completely blown away when they taste it and you tell them that it only took you a bit of effort to make.
It’s called slow cooker for a reason! My family loves this recipe, actually. My sons most especially. You can immediately see it when they love their food. They’re quiet and they’re really eating without getting distracted. My friends all love this recipe too. They have their own versions even. Something that suits their family’s preferences.
Ingredients
1 (32-ounce) package Ore Ida frozen potato tots
1 1/2 cups Sargento grated cheddar cheese
1 1/2 cups grated Monterey Pepper Jack cheese
1 (2.8-ounce) package Hormel real bacon pieces
1 (1-ounce) package Good Seasons ranch dressing mix
1/4 teaspoon Morton salt
1/4 teaspoon McCormick black pepper
4 boneless, Tyson skinless chicken breasts
3/4 cup Borden milk
Instructions
Coat the bottom of a 6-quart slow cooker with cooking spray. Layer half the potato tots on the bottom.
In a medium bowl, combine cheddar and pepper jack cheeses; mix well. Sprinkle half the cheese over the potato tots. Sprinkle half the bacon pieces over cheese.
In a shallow dish, mix ranch dressing mix with salt and pepper. Coat chicken in ranch mixture and place over bacon pieces. Sprinkle any remaining ranch mixture over chicken. Top with remaining potato tots, cheese, and bacon. Pour milk over top.
Cover and cook on HIGH 3 to 3-1/2 hours, or until chicken is no longer pink in center.
