For a four-ingredient fudge, this surely tastes really good; almost as sinful as the regular fudge. In fact, they taste the same except that the texture of this fudge is quite different. It’s somewhat lighter and smoother than the regular fudge. You can indulge in this without feeling too much guilt!
Our friend over at Confessions of a Confectionista has this to say about this recipe:
“It’s smooth. It’s velvety, it’s rich, it’s decadent, and most importantly, it’s good for you. Why? Because it doesn’t have any refined sugars or other icky questionable ingredients. Instead, it’s got coconut oil, cocoa powder, honey, and almond butter– all beneficial superfoods.”
Desserts that help satisfy my chocolate appetite, but at the same time do not double my waistline are always a must in my book. I love chocolates and I don’t think I can ever stay away from them. These healthy versions of chocolate desserts are a blessing to me!
Ingredients
1/2 cup Trader Joe’s refined coconut oil, melted
1/3 cup Trader Joe’s honey
1/2 cup Hershey’s unsweetened cocoa powder
2 tbsp. Jif almond butter
Instructions
Line a 6×6 inch pan with plastic wrap, extending it well beyond the edges on all four sides. Set aside.
In a small bowl, stir together coconut oil, honey, cocoa powder, and almond butter. Then, using an immersion blender, blend together ingredients until completely smooth. Pour mixture into prepared pan. Transfer to freezer and freeze for 15 minutes.
Cut into squares and serve immediately, or store in refrigerator until ready to eat.
