If you’re anything like me, every morning is a bit of a struggle. It’s not exactly easy to get up at 5am every day, and on top trying to get yourself ready for work you need to make sure your kids don’t leave the house hungry. I will be the first one to admit I’ve literally thrown apples at them while rushing them out the door. There’s nothing wrong with a fresh apple, but it’s not a very wholesome morning meal, is it?

A few weeks ago I decided I don’t want to stress over breakfast anymore, so I spent a few hours putting together a meal plan. I collected a bunch of easy breakfast ideas and I actually made a monthly plan, listing out every ingredient I would need for each recipe and how much time I would need to make them.

It took me a couple of hours to do that but it has had a huge impact on my family’s morning routines! Things are not as chaotic anymore, and no-one has to leave the house with an empty belly. These are my favorite 7 easy breakfast ideas – I hope you enjoy them as much as I do!

I have fallen in love with chocolate dipped cheesecake bites. Nobody tell my husband.

So, it was a blizzard outside and my entire family was stuck in the house. No school and no work. We tend to get a bit of cabin fever under these circumstances. So, what did we do? We made chocolate dipped cheesecake bites of course! My youngest son insisted that we all dress up as chef’s while we made the treats. My husband wasn’t playing along with these shenanigans but the rest of us did. I even drew a tiny mustache on my upper lip. I looked like a French baker.

For as long as I can remember my mother and grandmother always made some sort of a fruit salad for family gatherings. Now, these fruit salads weren’t just any old combination of fruit from a can. My mom would typically hollow out a watermelon shell and place her fruit salad inside of it. She’d make the rind look like a basket! Mom was always so creative. Three bean salad is a staple dish served at every church potluck I’ve ever attended.

When I was growing up I can remember my church having potluck suppers quite often. You can bet your bottom dollar that there would be at least two bowls of three bean salad on the table. One of them was typically made by my grandmother. I’d always choose grandma’s over the others.
