Making casseroles has always been one of my specialties. I guess I get it from my mama. Mom would make casseroles quite often when my siblings and I were growing up. I think it had to do with dad being a truck driver. She wanted something wholesome and filling for us kids but not something that took her hours to make while dad was away.
Plus, us kids could eat the leftovers the next day for lunch. Mom was always so practical.
