My best friend is a sucker for cobblers.  She absolutely adores anything with a crumble on top.  She’s always seeking out amazing recipes like this one.  This recipe is no exception to her favorites!  She sent it to me because it was so delicious, and yet had only 4 very simple, everyday ingredients.  Good by itself, but this recipe pairs so nicely with a cold scoop of ice cream as well!

 

When you add the ice cream to the crumble, the ice cream will begin to melt a bit as it hits the heat of the crumble.  I’m pretty sure that’s the best way to eat this kind of dessert, with the ice cream slightly melted and the crumble super steamy.  Your guests will absolutely be thrilled with this super simple recipe you won’t want to admit how little time it actually took you!  Don’t tell them though, just smile and say “Thanks!”  There’s no reason that your friends need to be in on our little secret.

There are 2 requirements I have when it comes to satisfying my burger craving.  First, it must be real meat.  The beef must be legit, none of this vegetarian burger stuff.  Second, it must be juicy.  Somehow juicy burgers really hit the spot.  I absolutely love a good juicy burger, so this is a recipe that I know I had to share with you!

 

This burger recipe is enough to feed a crowd!  The best part of it is that you don’t have to get out tons of ingredients to ensure everyone is taken care of.  It’s the same ingredients in the same dish.  It’s a burger casserole, if you will!  That fits your craving for burgers…. and your craving for casserole.  A two-fer!

There was a time that I wasn’t that big into soups.  I often look back with shock because soup is awesome!  Stews and soups that are hearty and filling are now some of my most favorite foods.  If you’re in a hot part of the country these words might annoy you, as there’s plenty of heat outside your home.  This soup is worth turning the air conditioning down a little and pretending it’s January.

 

I love soups that are filled with protein and have something to chew.  A chunky soup is so satisfying to my soul and brings me so much joy!  This soup is perfect for joy bringing as it is chunky and delicious, without overwhelming your stomach or making you want to just.go.lay.down. You can relate, right?  You’re so full, you just have to lie down!?

There’s nothing a BBQ needs more than a perfect pasta salad.  The perfect pasta salad is one that’s creamy, of course.  It pairs well with the classic BBQ entrees, like hamburgers or hot dogs.  Additionally, it’s a comforting dish.  This recipe fits all of those qualifications without sacrificing anything in flavor!

 

What I love about this recipe is that it’s got the classic flavor and texture of a delicious and comforting pasta salad, and yet it’s got a surprising ingredient that I wouldn’t have thought of on my own.  And I promise you won’t be disappointed.  This macaroni salad is a twist on a BLT, meaning it’s got a little spinach and tomato throughout the salad for a fun and different texture.  It’s also got one surprising ingredient, rice vinegar.  This gives it a bit of a tangy kick!

Growing up, my mom always had a garden.  Despite the Texas weather being practically unbearable, she would work in her garden on a daily basis.  She often had us kids weed the garden.  And weeding?  I can’t tell you how much I came to hate weeding.  It’s one of the many reasons I hate gardening today.  Even though there are many advancements and clever ideas to minimize how much you have to weed, the idea is ingrained in me that gardening requires many laboring hours in the heat picking weeds.

 

She always had a good crop though.  I’m pretty sure my mom could grow anything.  She is a true expert when it comes to the garden and knows all the ins and outs of what plants grow best and when.  One thing we always had an abundance in was tomatoes.  Tomatoes seemed to ripen all at once.  So you could go weeks without any tomatoes, and then all of the sudden have 50 pounds within a week.

I feel like this post should start as a confessional.  “Hi.  I have 4 crock pots.”  Who in their right mind has 4 crock pots!?  Well, I do.  I got the first one when we got married.  Soon, however, I realized I needed a smaller one for things like dips or queso.  So, I purchased another one.  A big lover of black friday, I accumulated one of those double crock pots, for no other reason than it was on sale and I liked it.

So that’s 3 crock pots.  About a year ago, I changed the coloring of our kitchen from red to teal.  Which really meant my red crock pot didn’t look so nice in the kitchen anymore.  I ventured out and purchased a new crock pot that was of the teal color scheme.  So there you have it, 4 crock pots… and they’re all necessary and needed!

A few years ago, I had a conversation with a friend of mine about recipes.  She insisted that there are really only 100 recipes in the world, and all others are just slight variations of those 100 recipes.  That may be true in some way, it does seem like there are basics, like tacos, or meatloaf or chicken… but there are so many different methods of preparation for each of those!  There’s shrimp tacos, beef tacos, tacos with just meat and cheese and tacos with all the fixins!

 

Long story short, I’ll take variations any day!  This recipe is the perfect example of a variation you won’t want to miss out on.  Typically when you think enchilada, you think cheese or meat filled. Not this one!  You’re going to love this desserty spin on Apple Enchiladas!  They’re so unique, but with so much flavor you will not regret making it.
