When we came over to visit Uncle Rob, we were having a bit of good luck. His friend just invited him to try his newly opened buffet restaurant and he gave Uncle Rob a discount. So all eight of us proceeded to the restaurant and enjoyed an all-you-can-eat buffet for half the price. Oh my goodness! There was a lot of food!
I felt like there were twenty tables full of food in there and I was in food heaven! There was a table full of all kinds of roasted meat—roasted turkey, roasted pork, Angus beef, and roasted chicken. There was a table full of all kinds of desserts—there were the classic pies, cakes, and even pastries. I enjoyed the appetizer/side dish table the most, though.
Yes, I love to eat, but I can’t actually eat a lot because my stomach gets full easily. Appetizers were enough for me that day. I ate potato salad (it was so creamy!). I ate stuffed mushrooms too (they were so cheesy and meaty, my goodness). But I probably ate 10 pounds of bacon wrapped asparagus.
The bacon was juicy and crisp at the same time and the asparagus didn’t lose its crunch, even after being cooked. We really did enjoy the dinner. A couple of weeks later, I found myself craving those bacon asparagus appetizers, which was why I made this recipe. Yum!
