Zucchini is by far my favorite summer vegetable. I grow plenty and eat them almost every day, they’re so versatile! First of all, I like them just sliced fresh on their own with a sprinkle of salt, or in a salad. Then I also love zucchini bread which is sweet and delish as well as healthy. Finally, I love zucchini in soups and casseroles. I’m always looking for new dishes to chop it up and throw it into. I found this one that is hailed as the “best.” Reading something is the best instantly makes me want to be a food critic and that’s just what this did for me.

 

I gathered some zucchini from the garden and picked up the other four ingredients. I love that they are minimal! The photo alone of this dish made me drool a little bit, because if you love zucchini you just want it all the time – am I right?

Quick Tip: Sprinkle zucchini with a pinch of salt then wait 5 mins to drain it – this removes excess liquid.

If you’re like me, whenever you go to your favorite breakfast place you absolutely have to have country biscuits and gravy. Whether it’s a meal or a side, I just can’t deny my love for those classic southern flavors. That’w why I was more than delighted to find this casserole that features not only the sausage gravy and biscuits but also eggs! Just close your eyes for a moment and imagine the goodness, you’re in aren’t you? I am all in and could eat this every day – no lie! Thankfully, it’s a dish that the whole family loves so I can make it whenever I want.

 

So you’ve got all the important players for a complete breakfast. The layer of biscuits on the bottom, egg mixture and cheese if you like on top of that, then smothered in that delectable gravy! You’ll eat serving after serving I promise and get no family complaints.

I was about to enjoy a day out with the mother-in-law and knew I’d be gone until dinner time. I had chicken on hand with a handful of other ingredients and decided to figure out what I could slow cook. Chicken Cacciatore was the winner! I hadn’t had this flavorful Italian meal in quite some time, and I had never put it in the crock. I figured I’d throw it together, go enjoy our shopping day and then come home to make some pasta and boom, done! Little did I know it’d be such a huge hit with everyone.

 

My mother-in-law who’s sweet as pie is usually pretty quiet. She was so loud when she said, “OH this is REALLY good, you need to give me this recipe!” I laughed because usually she was giving me hers, which I love, but how funny! She wouldn’t even leave without it. I had happy kids, husband and mom-in-law!

If there’s one thing I’m certain of, it’s that cube steak cooked in gravy is always a winner. Not only that, grave is a winner in itself! My kids used to just eat the gravy over rice or potatoes and not the meat. Now that they are older they love the tender bites of meat and get excited whenever I make this dish. Cooked in the crock it’s so perfect, and you can literally throw these ingredients in there, in the morning while your coffee is brewing. By the time your coffee is done the crock will be set to make a welcoming and delicious meal for later. Don’t you just love that?

 

This was one my mom always made, and she even served it over noodles one time because I think that’s what we had on hand. It didn’t matter, I loved the gravy just like my kids do now.

Shut the front door! This Root Beer Slow Cooker Pulled Pork has me reeling. It is so tender and flavorful, you don’t even need to use your favorite BBQ sauce on top. I am not a regular soda drinker but I get curious when I find things that are made with them, and so I put this on my short list of things to try and man am I glad! We’re big fans of BBQ meats in general, and pulled pork has always been my favorite. I knew I’d like this but in my mind I couldn’t figure out how the root beer flavor would complement the pork.

 

We toasted our buns (haha) and readied them for the pork. I had all the important players out, too. I got two kinds of BBQ sauce, sweet and spicy pickles, and I also made up a batch of fresh coleslaw to top them off.

Like a deconstructed burrito, this crock meal brings everything you want all together in a simple and appreciative way. It’s like magic, you throw it all in there and BOOM dinner!

I love using my crock no matter the weather outside. It’s so effortless and you can make absolutely anything in there. Chances are you’d be rushed and run to the nearest Mexican joint anyway for a burrito. Why not have a hearty and healthy meal waiting that’s also less expensive? It makes complete sense to me. Plus, you can always throw this concoction in a tortilla shell if you like.

When I came home, my family was already there and had been smelling this for about an hour. They eagerly asked if it was done. I’m actually surprised they didn’t text or call me to see if they could dig in. I usually let them with the warning that they better leave some for me!

Growing up, Twix bars were one of my favorite treats that my dad would buy me. Every time he would go to the local gas station, he would come back with a Twix candy bar and we would sit on the porch and share it. What a delightful memory! I guess you could say that this pie is a little special to me.

Recently, I made it and shared a piece with my dad. It was just like old time’s sake, but this time it was my version. This Twix pie has a few steps to it, but believe me, you will be so excited when you make it and take that first bite!

 

I could not believe how smooth the top of this pie turned out. It seriously looks like glass. I think I could see my reflection in it! The taste is unbeatable and you will definitely want to go for seconds. And it really tastes just like the candy bar, which I couldn’t believe until I got to sink my teeth into this!
