I have eaten chicken many ways throughout the years. Between baked and friend and even broiled, chicken is always cooking in my house. I have all sorts of seasonings and rubs that I use to prepare the meat and create a delightful dinner. Have you ever heard of sunshine chicken? It’s a tangy lemon chicken dish that totally brightens up your day. The name alone, Sunshine chicken, is simply wonderful. How can you not smile when just saying it out loud. Sunshine chicken. I bet you just read that out loud 🙂
Anyway, this isn’t lemon chicken like you would find at a Chinese restaurant. There are no syrupy glazes on it. In fact, Sunshine chicken is quite healthy for you as it contains anti-inflammatory lemon juice and turmeric. There are a lot of health benefits going on in this chicken dinner. Imagine that! My husband isn’t the biggest fan of this recipe but my children love it. They take turns seeing who can hold the lemon wedges in their mouths the longest. Goofballs! It keeps ’em quiet haha!
