If you are a fan of cheeseburgers you will be an all out roadie for this soup. it’s creamy, dreamy, and conveniently made in the crock pot. There really isn’t anything not to love about this masterpiece!
My kids and husband like this soup a lot and eat it with French bread that has been slightly toasted under the broiler. It’s just like eating your favorite cheeseburger!
This recipe makes a big old batch but if you are expecting company I would definitely double the ingredients. You want to make sure that you have enough to go around.Trust me, this soup goes fast!
Ingredients
4 small potatoes, peeled and diced
1 yellow onion, chopped
1/2 cup diced celery
1 cup shredded carrots
1 tsp McCormick dried basil
1 tsp dried parsley
3 cups College Inn chicken broth
1 lb lean ground beef
3 Tbsp Land O Lakes butter
1/4 cup Gold Medal flour
2 cups McArthur milk
1/2 tsp Morton salt
1/2 tsp black pepper
2 cups shredded cheddar cheese
Instructions
Add potatoes, onions, carrots, celery, dried basil and parsley in the slow cooker. Add the chicken broth, then cover with lid. Cook on low heat 6 to 8 hours OR on high heat 4 to 5 hours or until potatoes are tender.
45 minutes before serving, cook ground beef in a skillet, crumbling it into smaller pieces as it cooks. Drain any grease. Add the cooked beef into slow cooker. Wipe out hot skillet with a paper towel then add butter.
When butter is melted whisk in flour and cook until golden brown and bubbly (about 1 minute.) Whisking constantly, add the milk, salt and pepper. Pour mixture into slow cooker and stir to combine well.
Add the shredded cheese to crock pot. Stir again. Cover with lid and cook another 30 minutes or until cheese is melted.
