As a young girl growing up in rural Michigan, I was constantly exposed to hot and hearty foods. Cottage cheese lasagna, for example, was one of the many dishes my dear mother would make for her family. You see, dad didn’t like ricotta cheese and mom said it was too expensive so she compromised and used cottage cheese. You’d never know the difference! I find this to be really funny because my husband hates ricotta cheese, too and so do some of my friend’s husbands. It must be a man thing!
