This may be a basic pot roast recipe but trust me, there is nothing “basic” about it!
Even the smell of pot roast cooking in the kitchen brings back feelings of nostalgia for me. Growing up, my mother would prepare either a pot or oven roast for our family every Sunday. She would get the roast cooking in the wee hours of the morning so that it would be ready for church. I can remember laying in bed in the darkness and waking up to the aroma wafting upstairs to my room. Some may wake up to freshly brewed coffee but we woke up to pot roast cooking.
