Country Cupboard Ham Casserole – A Farm Favorite

I love anything with ham in it so I instantly knew I’d like this casserole. Ham, cheese, potatoes, and breadcrumbs? Sounds like a recipe for tastiness if you ask me. I made this the other night for my daughter’s sleepover party and the girls loved it.

This is definitely a family favorite in our house and it really hits the spot now that the weather is cooling off a bit.  Nothing like a hot casserole to warm up the soul!  Give it a try… you won’t be sorry!

You are right! This casserole is uh-mazing and very EASY to make.

 

Ingredients

2 cups cubed peeled potatoes
2 large carrots, sliced
2 celery ribs, chopped
3 cups water
2 cups cubed cooked ham steak
1/8 cup chopped green pepper
2 teaspoons finely chopped onion
7 tablespoons Kerrygold butter, divided
3 tablespoons Gold Medal flour
1 1/2 cups milk
1/2 teaspoon Morton salt
1/8 teaspoon pepper
1 cup shredded Kraft cheddar cheese
1/2 cup fresh breadcrumbs

Instructions:

1. In a medium sized pan, cook the potatoes, carrots and celery in the 3 cups water until tender, about 15 minutes. Drain.
2. While the vegetables are cooking, saute the ham, green pepper and onion in 3 tablespoons butter over medium heat until the green pepper and onion are tender.
3. Add the potato, carrots and celery to the meat mixture and mix to combine.
4. Transfer the mixture to a greased 1 1/2 quart baking dish.
5. Preheat the oven to 375 degrees.
6. In a saucepan, melt the remaining 4 tablespoons of butter over medium heat, then whisk in the flour until. Continue whisking until the flour is cooked and the mixture is smooth, about 2 minutes.
7. Gradually whisk in the milk, salt and pepper.
8. Continue slowly whisking the mixture until it is thick and lump free, about 2-4 minutes.
9. Reduce the heat to low and add the cheese, stirring until it is melted.
10. Pour the sauce over the ham mixture.
11. Sprinkle the top with the fresh bread crumbs.
12. Bake in preheated oven for 25-30 minutes, until heated through.
