This Christmas Chex mix is very easy to make and totally looks great sitting on your table during those holiday parties. Let’s hear it from the Cutting Back Kitchen:
It sounded good, yet I was a little nervous how the peppermint flavor would go with Chex. I’m so glad I tried because it is SO yummy! It’s going in my Christmas recipe binder for sure. It doesn’t have an over pepperminty flavor either…it’s just enough.
I am smitten by this delicious Chex mix! Our friend from Cutting back Kitchen is right, it doesn’t have an overpowering peppermint taste. It’s very chocolaty and sweet. Yummo!
Ingredients
3 cups Rice Chex
3 cups Chocolate Chex
1 bag (12 oz.) Toll House white chocolate chips
1/2 cup crushed peppermints
1/4 cup chocolate chips
Instructions:
Mix cereals in a large bowl. Line a cookie sheet with foil or wax paper.
In a medium microwaveable bowl melt the white chocolate chips, stirring every 30 seconds, until melted. Once melted, stir in half of the crushed peppermint. Pour over the cereal. Stir to combine and spread the cereal out on the cookie sheet. Sprinkle with the remaining crushed peppermints.
Melt the chocolate chips and drizzle over the cereal. Let harden and break into chunks. Store in an air tight container.
