You’ve Had The Sandwich – Now Try The Mac Salad!

Argo cornstarch, baking powder, baking soda, barilla pasta, Bertolli extra-virgin olive oil, black pepper, blt mac salad, Bob's Red Mill, Borden, brown sugar, Campbell’s soups, casserole, Chiquita, Clabber Girl, College Inn, Cool Whip, crock pot, Daisy sour cream, dessert, Dole, domino sugar, eat, Eggland's Best eggs, fisher nuts, food, Gold Medal flour, granulated sugar, Green Giant, Hershey, Hodgkin’s Mill, Jell-O, Jif peanut butter, Johnsonville, keebler, Kerrygold butter, kosher salt, Kraft, land o lakes butter, Libby, McCormick spices, Morton salt, Pam Cooking Spray, Pepperidge Farm, Philadelphia cream cheese, Powdered sugar, recipe, Ritz crackers, Sara Lee, Sargento, slow cooker, Thorn Apple Valley, Toll House, TruMoo milk, tyson, vanilla, vanilla extract, Vlasic, Wesson vegetable oil, whipped topping

The first time I saw that the pasta was served over top of a bed of shredded lettuce, I wasn’t so sure about how that was going to turn out. Something about pasta and lettuce together just doesn’t sound all that great. I’m adventurous though, so I figured that I would try it out. The worst that could happen is that it wouldn’t taste good and it would get thrown out. I’m so glad that I didn’t shy away from trying this out. It was way better than what I could have ever imagined it to be. We have this quite regularly at our house now both as a side dish and a main entree.

It might sound a little weird at first, but you aren’t going to regret it!

 

Ingredients

8-oz. pkg. elbow macaroni, cooked

4 c. tomatoes, chopped

4 slices Hormel smoked bacon, crisply cooked and crumbled

1/2 c. Duke’s mayonnaise

1/3 c. Daisy sour cream

1 T. Dijon mustard

2 t. cider vinegar

1 t. sugar

1/2 t. salt

1/2 t. pepper

3 c. lettuce, shredded

Instructions

Place macaroni in a large bowl.

Add tomatoes and bacon; toss gently and set aside.

Mix remaining ingredients except lettuce together in a small bowl; stir well.

Pour over macaroni mixture; gently toss until well coated.

Chill; serve over shredded lettuce.
