It was one of those nights when it was quiet in the house. With four teenagers running around back and forth and in and out, that’s not something that happens very often. They were all off to friend’s houses for the night, so me and the hubby had the house to ourselves. We sat and just enjoyed the peace for so long, I forgot to get up and get dinner started. I didn’t even actually think about cooking at all. I considered maybe going out to eat, but I didn’t want to leave the peace at the house. We had to enjoy it while we could. That’s when I remembered a recipe that I wanted to try.
I jumped up and went to the kitchen to get to work. I knew it wouldn’t take long to toss together.
The longest wait we had was while it was chilling out in the fridge. I left the tomatoes out of the salad and just added some in on my own portion. It was delish! I’m just glad we didn’t have to share with the kids… shhhh!
