The great thing about this casserole is that you don’t have to make it from fresh vegetables alone. You can use your favorite mixture of frozen veggies to make things easier for you, when you don’t have the time for chopping.
But if you do get your hands on really tasty, organic, homegrown vegetables, I would highly recommend you give this recipe a try! It turns out so flavorful every time, that we hardly ever get any leftovers. You could also add even more veggies into this, according to your taste – or use different ones each time you make this. This casserole will turn out amazing no matter what kind of veggies you are using.
Ingredients
1 (20 ounce) package frozen mixed vegetables
1 cup chopped onion
1 cup chopped celery
1 cup shredded Kraft cheddar cheese
1 cup Hellman’s mayonnaise
1 1⁄2 cups Ritz cracker crumbs
1⁄2 cup Land O’ Lakes butter OR 1⁄2 cup margarine, melted
Instructions:
Cook the frozen vegetables according to the package directions. Drain well.
Combine cooked vegetables, onion, celery, cheese, and mayonnaise in a large bowl, stirring well.
Spoon the mixture into a greased 11 x 7 x 1 1/2 inch baking dish.
Combine cracker crumbs and butter. Stir well. Sprinkle crumb mixture evenly over the casserole. Bake at 350 degrees for 30 to 35 minutes or until thoroughly heated.
