I was never one for really making meals ahead of time and freezing them. I just made what I wanted when I wanted it. Then, I ate it. After having twins, that wasn’t as good of an option anymore. I didn’t always have time to cook when I wanted to. That meant a lot of fast food, takeout, or just skipping the meal all together. My mom and sister came over on a Sunday one afternoon and said that they were going to help me get more organized so I wasn’t so overwhelmed throughout the week. They had all kinds of recipes, and this one was included on the list. My husband really appreciates these in the morning when he has to run out the door in a hurry. It’s way better than going through the drive-thru.

Ingredients
10 medium size Azteca flour tortillas
8 Scrambled eggs
8 American Kraft cheese slices
1 pound Jimmy Dean pork sausage, cooked, crumbled, drained
1/4 cup salsa
Instructions
Combine sausage, eggs, cheese, and salsa.
Warm ingredients until cheese has melted.
Depending on amount you like, fill center of tortilla with 1/3-1/2 cup of the sausage mixture.
Fold ends of tortilla inward and then roll up the tortilla.
To serve immediately, use warmed tortillas. To freeze, place each tortilla in plastic wrap, seal tightly, and freeze.
When ready to eat, warm tortilla in microwave for approximately 2 minutes.
