I was chatting with my friend and neighbor Sally the other day about making easy meals when you are having a busy day. Sally told me that I should try making “Busy Day” casserole. Huh? What on earth is “Busy Day Casserole”? Well, folks, I’ll tell you! Busy day casserole is one of the best bakes I’ve ever made when I’m about ready to pull my hair out from stress and exhaustion. it’s easy to throw together and it is surprisingly wholesome. This past summer I volunteered for Vacation Bible School and then a teen camp. I was working in the kitchen at the teen camp, ironically. Anyway, I was running around all over the place and needed a few good casseroles to make my family that were easy to piece together. This hamburger, cheese, and rice bake would have been perfect during that time. Enjoy!
This lazy day dinner is comfort food 100% perfect. The great thing about Busy Day Rice Casserole is that you don’t have to cook the rice beforehand. That saves you a lot of prep time. You do have to brown the ground beef before you put it in the casserole, but it only takes about ten minutes. This ground beef casserole uses just six ingredients, and the combination works well.
