I don’t know about you guys and gals but when fall hits I’m all about the pumpkin desserts. Until I discovered this recipe for homemade pumpkin puree I was stocking up on a ton of store-bought pumpkin. Now, there’s nothing wrong with canned pumpkin but you don’t know what you are missing until you’ve tried a homemade version.

Shockingly, making your own pumpkin puree is super easy to do. All you need are two pie pumpkins and that’s it! Feel free to add in cinnamon, nutmeg, and clove powder if you want but it isn’t necessary.

Sally, my next door neighbor, and I were discussing all of the many ways that lasagna can be prepared. I, of course was rattling off most of the Italian ways. Meanwhile, sally was getting ready to tell me about the Mexican way. Boy, am I ever glad that she did.

Mexican lasagna is so simple to make and absolutely delicious to eat. It’s layer after layer of all of the beloved ingredients that makes Mexican food so good. I served this meal with all the fixings such as sour cream, refried beans, and salsa. I found that this casserole is also very good when scooped up with taco chips. Yum!

I am a big fan of breakfast foods, especially quick and easy ones. However, I don’t care much for cold cereal. How can anyone take on the day with just cold cereal in their belly? I know that I sure can’t and neither can my kids and husband. So, what’s a busy mom or dad to do?

Why, make these breakfast burritos, of course! You guys, this recipe is so very simple to follow and these burritos are mobile! Yep, you can wrap them up in foil and take them with you to work or school. How genius is that?

Honestly, when I first heard of this recipe I wasn’t envisioning the food that comes out of the oven when you’re done baking it. Nope. The mere mention of the word “pudding” makes me thinks of sweet treats like chocolate and butterscotch. this ain’t that kinda pudding, folks.

This bread and butter pudding is a savory meal. It’s not a dessert but rather a dinner or lunch option. shoot, you could eat this pan of amazing goodness for breakfast if you wanted too. It sort of reminds me of a BLT casserole. Just make it and let me know what you think in the comments 🙂

If you’re looking for a real manly platter of food (even if you’re a lady because sometimes we want stick-to-your-ribs food, too) then these frontier man nachos are for you! Now, don’t let the name fool you. Even us girls can and will devour a plate of these bad boys.

I’m not sure why these nachos are dubbed as man food but I really don’t care, either. They are good, filling, and super easy to make, especially if you have leftovers that can be used in the recipe. Enjoy!
