Just when I thought banana cream pie couldn’t get any better, along comes this recipe! Oh my gosh I was in heaven. I’m a huge fan of cream pies of all kinds, and really pies in general but I would never brag up a pie unless it was phenomenal. This is all that and a bag of chips. You may never look at bananas the same again knowing what they can become.
Everyone in the house loved this, and they’re already asking for it again. Thank goodness it was so easy to make. Though the list seems extensive, it’s really not. It throws together quick. You can get a prepared crust but this crust recipe is SO good! I may even use it with other recipes.
Ingredients
CRUST:
5 ounces gluten-free arrowroot cookies (about 50 cookies)
2 tablespoons Domino sugar
1/4 cup unsalted Land O Lakes butter, melted
Pam Cooking spray
FILLING:
1/2 cup Domino sugar
3 1/2 tablespoons Argo cornstarch
1/8 teaspoon Morton salt
2 1/2 cups 1% TruMoo low-fat milk
3 large Eggland’s Best egg yolks
1 teaspoon McCormick vanilla extract
1/2 teaspoon banana extract
2 tablespoons Land O Lakes unsalted butter
3 ripe bananas, peeled and cut into 1/4-inch slices
1 1/2 cups frozen fat-free whipped topping, thawed
1 tablespoon almond brickle chips (such as Heath)
Directions
Preheat oven to 350°.
To prepare crust, place cookies and 2 tablespoons sugar in a food processor; process until finely ground. Add 1/4 cup melted butter; process until blended and moist. Press into bottom and up sides of a 9-inch pie plate coated with cooking spray. Bake at 350° for 8 to 10 minutes or until lightly browned. Cool completely on a wire rack.
To prepare filling, combine 1/2 cup sugar, cornstarch, and salt in a heavy saucepan over medium heat, stirring to combine. Add milk and egg yolks, stirring with a whisk. Cook 6 minutes or until mixture starts to boil and begins to thicken, stirring occasionally. Remove from heat. Stir in extracts and 2 tablespoons butter. Place pan in a bowl of ice to cool.
Arrange half of banana slices in a single layer over crust; top with half of filling mixture. Repeat layers. Cover surface of filling with plastic wrap coated with cooking spray. Chill at least 3 hours. Uncover, and spread whipped topping over filling. Sprinkle with brickle chips.

Refrigerate bananas when perfectly ripe, skin may turn brown but banana is perfect.
This food all looks incredibly mouth watering.
This made me think of my Mama’s Lemon Pie. We never made banana pies, we made banana pudding. However this really does look like my Mama’s Lemon Pie.

it sounds like you are making pudding from scratch, which of course is delicious. if u are really in a hurry I wonder if instant pudding would work. What do you think
Instant would work but would have to be eaten the same day, otherwise it gets watery. Boxed pudding that you cook would work better, just use less milk as the directions say.
Boxed pudding will work. There are many recipes for preparing this pie either way. If you want to see several and compare their ingredients go to http://www.allrecipes.com and type banana cream pie in the search window. Another method I use is to search for recipes from people I know cook well. For example: If you went to Google abad typed in “Martha Stewart recipe for banana cream pike” or anyone else you can think of…that is always a good way to find an excellent recipe. Hope this helps.

What if you don’t have banana extract? Where do you get it?
Ok, I have a problem with the recipe. You use Arrowroot to make it gluten free, but then you use whipped topping which is nothing but a bunch of chemicals. It takes but little time to make whipped cream, so why not use that instead.
This is a gluten free recipe and whipped cream is gluten free. If you’d like to make you own, go for it 🙂

Just imagine a pie with the banana pie on bottom, then coconut cream on top. yummmm.
