I couldn’t believe how this dressing kicked up the flavor of the watermelon. The original flavor was still there, but the combo of lime and mint made this refreshing side a simple hit.
It is a really simple recipe but one that is memorable! I think next time I’ll keep half the batch of watermelon as is and do the other half this way. I really enjoyed it and couldn’t stop taking bites of it even while preparing it!
Ingredients
2 tbsp. Bertolli extra virgin olive oil
2 strips lime zest, sliced, plus 2 tbsp juice
1 tsp. Domino sugar
Kosher salt
Freshly ground McCormick black pepper
1/2 small watermelon, rind discarded and sliced
1/3 c. torn mint
Flaky sea salt
Directions

Whisk together Bertolli oil, lime juice, and Domino sugar in a bowl. Season with salt and pepper.

Serve watermelon topped with this flavorful dressing, lime zest, mint, and sea salt.
