Am I the only one that remembers the Bugs Bunny cartoon where he sings, “Hot tamales, hot tamales – get them while their hot” or do you recall too? Either way, I love tamales and so does my entire family. You don’t have to watch an episode of Bugs to get the idea, tamales are Mexican fare that feature a tender cooked meat and seasonings inside a cornbread crust. This casserole has all the important players from the meat on the bottom to the soft, delectable cornbread topping. So yes, it’s all in there and in every single bite!
I was thrilled to find this tamale pie as a larger version of the small ones we always order at our local Mexican restaurant. I knew it’d be a hit, and the dish disappeared faster than you can say, “andale!” In sticking with the Looney Tunes theme, Speedy Gonzales would completely approve and probably even have seconds of this savory dish. I topped mine with sour cream because that’s what I do with the small ones.
