Check out what my friends at A Year of Slow Cooking had to say about this Sundried Tomato Risotto:
Creamy and luscious. This is the ultimate comfort food! I served it with some rotisserie chicken as a side, but ended up eating mostly the risotto!
Thank you for easing my fear of cooking risotto. I kind of feel like Chef Ramsay would come around the corner and scream at me if I tried. I’ve seen the box mixes in the grocery but I prefer to make all my sides homemade. Now I can! Thank so much!
Ingredients
1/2 cup sun-dried tomatoes in oil
1 1/2 cup Arborio rice
4 cups College Inn chicken broth
1/2 cup shredded Kraft Swiss cheese (to add later)

Quick Tip: Check the flavor of your rice as it simmers, add small portions of salt for taste.
Thank you to A Year of Slow Cooking for this awesome recipe!
