You’ll never believe this scrumptious slow cooker meal is actually healthy

I first made this slow cooker meal on a Sunday, and it was a rainy day so I knew when everyone got home from school and work they’d want to warm up. Seriously, what is better on a chilly day than a hot bowl of delicious slow cooked goodness? There is really nothing that is more welcoming. I picked up a loaf of take and bake French bread to go on the side, and served it with real butter.

 

My kids absolutely love chicken so I knew they’d be excited. My son said he liked how the chicken was sweet and it had his favorite drumsticks included. My husband considers anything with meat and potatoes a hearty meal, he didn’t even notice the red peppers and onions cooked in because I used Vidalia sweet onions, and the red peppers cooked down and blended in with the juices. I’m certain you’ll love watching your family scarf down this secretly healthy meal like it’s a guilty pleasure.

 

Ingredients

2 lbs. chicken (any cut)

1½ lbs. potatoes, halved

1 lb. vegetables

 

SAUCE

½ C Kikkoman low-sodium soy sauce

½ C Sue Bee honey

2 tbsp. Hunts ketchup

2 tbsp. Lee Kum Kee sriracha

4 garlic cloves, minced

1 tsp basil

½ tsp oregano

¼ tsp black pepper

Quick Tip: Adding more sriracha gives the meal more kick, flavor it to your family’s desired level of heat.
