If You Haven’t Tried Your Chicken Like This, You Ought To!

Growing up, my mother would either make a pot roast or baked chicken for our Sunday meal. I never cared which one she made because they were both delicious. However, my heart secretly belonged to the baked chicken. It was always so filling and good. I can taste it now as I reminisce! Now that I’m all grown up and have my own family, I started making a new version of my mother’s baked chicken. I make more of a casserole out of it; I guess you could say.

I wrap my chicken breasts in bacon, top them with swiss cheese, and smother them in a hearty cream sauce. It turns out perfect every time! This has also been a very easy meal to make on those days when you have to feed a large crowd.

I’m proud to say this chicken has become a major hit at family gatherings, everyone is always waiting for it! And they’ve all wanted to have the recipe!

      • Nita Phariss August 3, 2017 at 5:00 am Reply

Measure the milk in the soup can, I guess.

      • Kris August 3, 2017 at 6:31 pm Reply

It says 1/2 a can of cream soup. Not milk

        • john hryniw August 28, 2017 at 4:44 pm Reply

i believe it says – 1 can of cream soup and then a half can (of the emptied out soup can) of milk.

        • Geri September 23, 2017 at 3:53 am Reply

Reread. 1 can soup, 1/2 can milk. (Use the empty soup can and fill it half way with milk)

      • Mary September 6, 2017 at 3:19 am Reply

No. After you dump out the soup, fill the can half full of soup and then mix that in.

I’m going to try this in my Instapot and cook for 30 minutes–put some cheese on it in a casserole and broil for a few minutes. I think it would be good.

What do you substitute in place of wine if you don’t drink? Apple Juice?

    • valleygirl43 August 3, 2017 at 5:38 am Reply

You will never know there is wine used, and all the alcohol dissipates, but if you don’t have access to wine at all, then buy some grape juice or non-alcoholic wine, which is usually sold right in the grocery store.

My husband never compliments much of my cooking ever but he said this was award winning chicken!

YUck! so where does all the bacon fat go??? and one thing I loathe is gooey bacon…this bacon can NO way get crispy!

    • Becky August 5, 2017 at 11:38 am Reply

put under the broiler for 5 minutes to crisp.

Like asparagus? line a cookie tin olive oil, pepper, bacon and asparagus. sprinkle asp. generously with olive ( i roll it on a separate plate.) take about 5 spears pepper them good and wrap top to bottom with a strip of bacon.
Line these on lined cookie sheet and in the oven 350 for 15-20 mins. Last few mins turn on broil to crisp up the bacon. Everyone I serve loves this. Enjoy.

If I bake it.I will wrap the bacon around the c

chicken and bake until bacon is done, then follow directions

The recipe calls for 6 boneless breasts.. but the picture shows 10 “bundles”… Are the breasts supposed to be cut up?

Probably not but the taste is wonderful when you use wine. I don’t drink either but I cook with wine. The alcohol cooks out.

That’s why you keep repeating your post and trashing what should be comments about the recipe. Very rude.

  22. Paula August 2, 2017 at 1:40 pm Reply

People need to know that cooking takes the alcohol out of wine, beer, etc. the flavor of white wine is so good.

  23. Theresa Roy August 2, 2017 at 3:40 pm Reply

Can the white wine be replaced with something g else?

    • Ruby September 24, 2017 at 1:37 am Reply

Try using chicken broth instead of wine.

  24. Cin August 3, 2017 at 12:55 pm Reply

This sounds delicious but I would cook my bacon in the microwave a little just to get some of the grease out. Then wrap it around chicken.

    • Carolyn August 31, 2017 at 6:20 am Reply

I like your idea of cooking the bacon a little in the microwave first – also, I think I would cut a slit in the chicken and insert the cheese before wrapping with bacon.

    • Lawana Hulsey September 27, 2017 at 5:41 pm Reply

Cin, try wrapping the chicken with Canadian Bacon. No fat.

      • Marie September 22, 2018 at 3:57 pm Reply

        Could use Pancetta. Mmmm

  26. BBunsen August 8, 2017 at 3:55 am Reply

I imagine you could use chipped beef in place of the bacon if you’re concerned about the bacon fat.

always try the recipe as is the first time. after tasting it, think about what changes you would prefer. it may not make it “better” necessarily, just make it more to your preferences.

    • Julie February 5, 2018 at 5:40 pm Reply

That’s exactly what I do, Deb!
