This 7-up bundt cake recipe has been a huge success over at 12 Tomatoes! It has received so many wonderful comments from readers – let’s take a look at what some of them have said about it:

Sounds very good. Like the easy method and knowing it always turn out to a nice moist cake. Can’t wait to try it!

Made this for Mother’s Day. Everyone loved it. My daughter wants it for her birthday. I will make it over and over. We also had it with a side of fruit. Was excellent.

 

This cake has such a wonderful flavor, you don’t even necessarily need to add the glaze. On the other hand, you could try drizzling it with melted white chocolate, too. And I have to say, this cake tastes amazing served with a scoop of vanilla ice cream!

 

 

Ingredients

Cake:

1 box yellow cake mix

1 (4.2 oz.) box instant lemon pudding mix

3/4 cup 7-Up soda

4 eggs

2/3 cup vegetable oil

Glaze:

1 3/4 cups powdered sugar

2-4 tablespoons milk, or to taste

2 tablespoons freshly squeezed lemon juice

1 1/2 teaspoons lemon zest

 

Instructions:

Preheat oven to 350 degrees and spray a bundt pan with cooking spray.

Combine cake mix, instant pudding mix, 7-Up, eggs and oil in a bowl, mix together until fully incorporated.

Pour mixture into the prepared bundt pan and place in oven. Bake for 35-45 minutes, or until toothpick inserted in center comes out clean.

Meanwhile, prepare glaze by mixing powdered sugar, lemon juice and zest in a large bowl. Gradually add milk, mixing until desired consistency is reached.

Remove cake from oven and invert onto serving plate. Let cool completely, then pour glaze over the top. Let glaze set, then slice and serve!
