I got a little carried away while making these for a party! I made so many that even when everyone had had at least four of these, there were still plenty to go. Which was good news for me, as I got to use the rest of them for my lunch salad the next day!

Ingredients
1 medium cantaloupe, cut into 1-inch cubes
1/4 lb. thinly sliced prosciutto
20 small mozzarella balls (ciliegine)
For serving, optional:
Chopped fresh parsley
Balsamic reduction
Instructions:
Thread prosciutto, mozzarella and melon cubes onto small cocktail skewers. Place on a serving platter.
Sprinkle with parsley, if desired. Serve immediately after drizzling with balsamic reduction, if using.

Quick tip: Make sure the melons are ripe, so you may want to buy them early on, or even prepackaged, to save time, and ensure ripeness.
