This is one of those rare dishes that everyone in my family really loves. With picky eaters in the house, it’s hard to find meals that are awesome for the whole family.

I usually serve homemade dinner rolls or biscuits on the side, and I’ve actually made super scrumptious sandwiches, using the leftovers from this casserole. Try it! You wouldn’t believe how tasty they turned out! If you’d like to add more veggies into this, grated carrots and sliced mushrooms work really well.

Ingredients

1/2 head cabbage, shredded

4 slices bacon, chopped

1 pound ground beef

1 onion, diced

3 cloves garlic, minced

1 teaspoon dried mint

1 teaspoon dried parsley

3/4 teaspoon kosher salt

freshly ground black pepper to taste

4 tablespoons tomato paste

1/4 cup red wine

1/2 cup plain whole milk yogurt

Instructions:

Preheat the oven to 375 degrees, and butter a 9×13 (or equivalent) baking dish. Toss the cabbage with a teaspoon of salt, and let it sit while you prepare the filling.

Sauté bacon until crispy. Pour off excess fat, leaving about a tablespoon in the pan. Add the beef to the pan and brown it, breaking it up as you go. Add onion, garlic, and seasonings and cook 3-5 more minutes, until onions are beginning to soften. Stir in tomato paste and wine. Remove pan from heat, and stir in the yogurt.

Spread half the cabbage in the buttered dish, and top with beef. Repeat with remaining cabbage and beef. Cover with foil and bake for 30 minutes, then remove the foil and continue baking for another 15 minutes. Enjoy!

Quick tip: You can omit the red wine, if preferred, and add a little beef stock if needed.

You could always copy and paste (including the picture) into a word document then print it out or save it. I do that all the time if there are too many ads, not a printable recipe, or I am not able to save it in pinterest. There are 3 dots at the top of the post on facebook, click on it and then click on save link and it will save it in facebook. To retrieve it just scroll down and look for explore, on the left side of your home page, and there is a “saved”, click on it and it will be there. There is always ways to have a recipe.

I usually just copy and paste into a word doc then print it out. If you don’t have Word, you could probably paste it into a notepad doc then print it out. There’s also a free office suite called Open Office if you want to download that.

It’s OK but I still prefer the real thing. I guess because I was raised on it. That being said, this recipe is great if you’re diabetic. I made it and my fasting blood sugar dropped a lot after I ate this for a couple of days.
