This Enchilada Casserole Is A Lifesaver Middle Of The Week Meal

When I know that I am going to have a long day at work, I will get up a few minutes early and get all the preparations done to make this. I’ll cook up the meat and chop up all the veggies. Mixing together what I can is helpful too. Then, when I get home from work, I will assemble the casserole in just a few minutes and go sit on the couch for some good ol’ rest and relaxation while it’s cooking away in the oven. You can have this any day of the week and it’s going to be absolutely amazing!
Ingredients
1 tablespoon corn oil
2 pounds lean ground beef
1 cup chopped white onion
1 cup chopped green pepper
2 cloves garlic finely chopped
1 cup fresh whole kernel corn
16 ounce Hunt’s can stewed tomatoes
4 ounce can chopped mild green chilies
1 teaspoon chili powder
1 teaspoon ground cumin
16 corn tortillas
1 pound Kraft monterey jack cheese shredded
8 ounce jar Chi-Chi’s prepared salsa
2 tablespoons chopped green onion
15 ounce can tomato sauce
Instructions
In large skillet heat oil over high heat.
Add beef, onion, pepper and garlic then sauté stirring constantly until meat is browned.
Drain off fat.
Stir in corn and remove mixture to large bowl.
In small skillet heat stewed tomatoes, tomato sauce, chilies, chili powder and cumin to boiling stirring to break up pieces of tomato.
Heat oven to 400.
Spoon 1/2 cup sauce into bottom of shallow baking dish .
Stir 1/2 cup sauce into hamburger mixture.
Working on waxed paper dip a tortilla in sauce then fill with 1/4 cup meat mixture and 2 tablespoons cheese.
Roll up and place in baking pan.
Repeat to make 2 layers of 8 enchiladas then stir any remaining meat mixture into sauce and pour over enchiladas.
Sprinkle with remaining cheese.
Spoon salsa over top and bake 30 minutes.
Sprinkle with chopped onions and serve immediately.

How can I how can I print your recipes? Very frustrating.
For tasteerecipe, usually on the second page under the tastee recipe is a link to where they copied the recipe. You should be able to click on the link and go to the original recipe’s site. There they may have the ability to print it. Sometimes it doesn’t. Good luck.
There’s a web page and syncable app called copymethat.com that I use to instantly copy recipes into my own web based recipe book. It works well for me. Good luck.

My mom placed the tortillas flat then layered the ingredients, then another row of tortillas. She didn’t pretty cook the onions either. Tortilla, meat mixture,onions,cheese then repeat.

What size “shallow” baking dish do you use? Recipe doesn’t specify.
I make a dish similar to this however instead of corn tortillas I us corn tortilla chips. then I serve it with guacamole and or sour cream This is a good way to us stale chips
WAY too much work! I have a much easier recipe. Just brown your ground beef (onions optional), spoon it into tortillas of your choice, and pour enchilada sauce (canned – delicious!) over it. Top with grated cheddar. Done in 25 minutes. Can do the same thing with chicken breast, and use a can of cream of chicken soup instead of the enchilada sauce….that’s delicious, too.

For all online recipes I highlight the recipe, paste it into a Word Document & save them organized into my recipe file. From there any of them will print out easily.
Great recipe. I appreciate the details of the instructions. Very easy to make. To those folks who feel they need to be negative about the Tastee site or the recipe, I am saying a prayer for you. May God Bless you and help you to be a more positive and likeable person.
