When I know that I am going to have a long day at work, I will get up a few minutes early and get all the preparations done to make this. I’ll cook up the meat and chop up all the veggies. Mixing together what I can is helpful too. Then, when I get home from work, I will assemble the casserole in just a few minutes and go sit on the couch for some good ol’ rest and relaxation while it’s cooking away in the oven. It’s a great way to get a homemade meal on the table fast! Check out what they are saying about this recipe over at Group Recipes:

“This sounds like a good Saturday kind of supper.”

You can have this any day of the week and it’s going to be absolutely amazing!

2 tablespoons chopped green onion

15 ounce can tomato sauce

Add beef, onion, pepper and garlic then sauté stirring constantly until meat is browned.

Stir in corn and remove mixture to large bowl.

In small skillet heat stewed tomatoes, tomato sauce, chilies, chili powder and cumin to boiling stirring to break up pieces of tomato.

Heat oven to 400.

Stir 1/2 cup sauce into hamburger mixture.

Working on waxed paper dip a tortilla in sauce then fill with 1/4 cup meat mixture and 2 tablespoons cheese.

Roll up and place in baking pan.

Repeat to make 2 layers of 8 enchiladas then stir any remaining meat mixture into sauce and pour over enchiladas.

Sprinkle with remaining cheese.

Spoon salsa over top and bake 30 minutes.

Sprinkle with chopped onions and serve immediately.

How can I how can I print your recipes? Very frustrating.

    • Janet L Grand June 20, 2017 at 1:37 pm Reply

For tasteerecipe, usually on the second page under the tastee recipe is a link to where they copied the recipe. You should be able to click on the link and go to the original recipe’s site. There they may have the ability to print it. Sometimes it doesn’t. Good luck.

There’s a web page and syncable app called copymethat.com that I use to instantly copy recipes into my own web based recipe book. It works well for me. Good luck.

My mom placed the tortillas flat then layered the ingredients, then another row of tortillas. She didn’t pretty cook the onions either. Tortilla, meat mixture, onions, cheese then repeat.

Hummm never heard of enchiladas made like this, at least not true Mexican Enchiladas.
TASTEE RECIPE, where did you find this. Your website is also hard to follow.

    • jessicafaidley August 10, 2017 at 6:24 pm Reply

It’s an enchilada casserole so it isn’t going to be “true Mexican enchiladas”. Sorry, you are experiencing difficulty with the site, Judy. How can we assist you?

  8. Tim August 17, 2017 at 7:22 pm Reply

Sorry, but this is one cluttered mess here. Too bad. Recipes look good.

How comes there isn’t a print option of these recipes?

  10. Susan August 23, 2017 at 4:44 pm Reply

What size “shallow” baking dish do you use? Recipe doesn’t specify.

I make a dish similar to this however instead of corn tortillas I us corn tortilla chips. then I serve it with guacamole and or sour cream This is a good way to us stale chips

WAY too much work! I have a much easier recipe. Just brown your ground beef (onions optional), spoon it into tortillas of your choice, and pour enchilada sauce (canned – delicious!) over it. Top with grated cheddar. Done in 25 minutes. Can do the same thing with chicken breast, and use a can of cream of chicken soup instead of the enchilada sauce….that’s delicious, too.
