I don’t think I could ever tire of eating this yummy chicken. It’s tasty, easy to make, and everyone in my household enjoys it. Shoot, even my picky eater daughter loves it! You know if the kiddos like the meal it is a keeper. So, g’head, give it a try! I’m telling you, it’s a real winner of a meal. Are you still pondering over why this meal is called Forgotten Chicken? You may be wondering why it is called Forgotten Chicken. Well, that is because, if you forget it is in the oven, chances are, it is still good. You can throw this together, put it in the oven, and walk away for a while. Now, of course, don’t go walking away for wayyyyyy long periods, but this is quite the easy dish, and I would even call it fool proof!
Well, then, that answers that question 🙂
Ingredients
1 lb Tyson boneless skinless chicken breasts
2 cups Uncle Ben’s Minute rice (I used brown rice)
1 can Campbell’s cream of mushroom soup
1 can Campbell’s cream of chicken soup
1 can of water (use one of the soup cans)
1 tbsp. Land O Lakes butter
1 envelope Lipton onion soup mix
Instructions
Using the 1 tbsp. butter, butter a 9 x 13 baking pan.
In a medium bowl, combine the cream of mushroom soup, cream of chicken soup, 1 can of water, and Minute rice.
Pour mixture into buttered pan.
Place chicken breasts on top of mixture.
Sprinkle Lipton onion soup evenly on top of chicken breasts.
Cover pan with foil and place in a preheated oven, 350.
Cook for about 1- 1 1/2 hours, or until the chicken is cooked through.

I would do it in a crockpot for 4 hours.
Absolutely! I cook whole chickens in my slow cooker…but dont expect a brown crust

You are likely right about the Tyson plants in Texas, but, meat processing plants are sending live chickens to China to be processed, and then it is returned to the U.S. for packaging….. scares me……knowing what China is capable of.

Sorry, but most of those live chickens are hatched, raised, and processed in Wilkes County NC and in Arkansas. Not sure where you’re getting your information.

Snopes investigated the rumor about Tyson sending chickens to China to be processed. They found the rumor to be false and finds no evidence that any other company is doing it, either. These rumors are easily investigated online before you libel a company like Tyson.
My husband didn’t work for Tyson directly, he did drive for a truck company and was contracted to haul Tyson only. I can guarantee you Tyson processes their chicken products here, I’ve been to all their plants in every state over the years. Just as a side note, check the sodium of the chicken breasts you’re buying for this recipe. We had to for health reasons for my husband and Tyson was way lower in sodium, like over 200mg lower.
This is a great recipe but I prefer milk or cream in place of water. It makes the dish much tastier. You can also used dried onions instead of onion soup and it is still great.

LOVE LOVE LOVE So easy My sister in law gave me this years ago & she called it no peek chicken. The name has evolved to peek a boo chicken in my house. I also use milk in place of water & the brown rice uncle bens. Is great also
The recipe i had for this meal was a bit different. I used one whole cut up chicken or just thighs (bone in), 2 cans of French onion soup that would be poured over the 2 cups of converted rice, then the layer of chicken on top, then 1 can of cream of mushroom soup thinned out hust enough with milk then spooned over that making sure it kind of hits the rice too. Baking it for at least an hour making sure the chicken is done. It makes really tasty rice. I love eating it fresh cooked frozen green peas (no can veggies yuck)

What size cabs of soup do you use for this?
I use Uncle Ben’s wild rice mix instead of minute rice. Pork chops are also good.
I live near a Tyson chicken plant. Several friends work in the processing plant and I have friends who are farmers who raise chickens for Tyson. I seriously doubt that the chicken I get would come from China. That would be a stupid, costly business move
Other than the chicken, this recipe is processed crap. Minute Rice? Canned soup? Packets of onion soup mix?
Ugh. No thanks. This is for people who don’t know how to cook a proper meal with real ingredients. And its not the time factor. You can cook excellent, actual homemade meals with real onions, seasonings, mushrooms, and a roux made with flour, milk and butter instead of canned soup. Takes little extra time.
This recipe is no better than getting McDonald’s and might have more calories.

I give alternatives to recipes most times. Usually I tell people to cut out the salt or reduce the amount.

I am going to make this using an alternative to cream soups * a roux as you mentioned. Organic dried onions, instead of the salty, Lipton soup mix.
*In a small sauce pan, melt butter over medium-low heat. Whisk in flour and let cook for 1-2 minutes.
Slowly stir in chicken broth, then milk. Whisk until it begins to thicken. Let it simmer for a few minutes. Season with salt and pepper.
I like these recipe ideas and make substitutions, as desired.
Forgotten chicken probably refers to left over chicken that was remembered in time to make this meal. Looks delish!

Seriously folks, it is not hard to “natural up” this recipe. You can buy Pacific brand cream of soups which are organic, you can par boil regular rice, you can use dried onion flakes. Stop yer whining.
