Fresh From The Fridge: Mennonite Refrigerator Rolls

Who doesn’t enjoy a piping hot dinner roll with their plate of food? In my household, dinner rolls or biscuits are a staple at many of our meals. My husband and kids love them! I have an old family recipe that I generally use but I came across this wonderful Mennonite-inspired recipe over on the Amish 365 website and instantly fell in love with it. It’s a process you have to start the night before you intend on eating the rolls but that’s okay, it is well worth the wait and hassle. And really, these rolls are not hard to make in the least. Enjoy!

These rolls taste just like the rolls I remember having at church potlucks at my little Mennonite church in Michigan.

 

Ingredients

1 package Red Star yeast

1 1 /2 cups lukewarm water

1 cup warm mashed potatoes

2 /3 cup Domino sugar

2 /3 cup Crisco shortening

2 eggs

1 1 /2 teaspoons Morton salt

6 – 7 cups Gold Medal flour

 

Instructions

Dissolve yeast in water.,

Stir in sugar, shortening, salt, potatoes, and eggs.

Add flour 2 – 3 cups at a time.

Mix well and refrigerate overnight.

Roll into ball shapes and place in two greased cake pans.

Bake at 350-375 until golden brown on top.

    Does the shortening need to be melted before adding?
