My husband and I were like most couples buying a first home. So excited to get moved in, and then getting smacked with the reality of how much work it was going to be. We knew that there was going to be plenty that had to be accomplished, but we just didn’t know the true amount of time that it was going to involve. We would start on a project thinking that it wasn’t going to be that hard, only to realize that it was that hard, and we were still working on it three days after we expected to be done. It’s the joys of home ownership though, right?

I always tried to start us off with a good breakfast when I knew that there was going to be work that had to be done that day. Sometimes we wouldn’t make it around to eating lunch, so a great start was very important. When I discovered these muffins on NeighborFood, they became our new weekend breakfast.

Friday nights meant me in the kitchen getting these ready for the next morning. We could wake up with breakfast already done. That meant no time wasted on getting things together. We could grab a muffin and get right to work. It sure was a big time saver.

My great-grandmother made the best lasagna in the whole world. I remember going to her house for holidays and summer vacations. She lived about a 10 hour car ride away from us, but it always worth every annoying minute in the car when we got there. She was the happiest, and tiniest person in the whole world. She weighed about 80 pounds, but she could hug us harder than a grizzly bear. My mom would just sit and talk with her at the table for hours while we went and played in her enormous back yard. When it was time for dinner, they never had to call us twice to the table. We knew it was going to be delicious.

Whenever we were there, she always made us this cottage cheese lasagna that made my mouth water. It was very similar to this recipe from NeighborFood. When Grandma passed, I asked mom about the recipe.

Mom had gotten her cookbooks, but the recipe wasn’t in there. We were so disappointed that Grandma never wrote it down. She made it so much though, she probably just had it memorized. So, when I showed this one to my Mom, she had a tear drop from her eye. “This is it!” Is all she could say.

At my house, we are burger people. We could eat hamburgers a couple of times a week without anyone complaining I think. That’s what happens when you are in the only woman in a house full of boys. God blessed me with three wonderful boys and an amazing husband. I’m a little outnumbered, but instead of trying to fight it, I just go along with whatever makes them happy. That means eating a lot of meat! My guys love it. They would be pretty disappointed in me if I set out a chicken salad for them for dinner. I would be fine with it, but they would be wondering when the meal was going to be done.

I like hamburgers just as much as they do, so we have them quite frequently. Maybe a few times a month. Another thing we like in our house is spicy! When NeighborFood presented this Cajun burger recipe, I had to fire up the grill right away. I knew they were going to become a quick family favorite at our house.

Thankfully, I had everything we needed to make these in the house, and I could patty them up right away. Boy oh boy were they good. I had to double the recipe, as my fellas can eat more than one burger, but it was incredible all the way around!
