Peanut Butter And Bananas Have Always Been My Favorite Combination! – Try These Cookies

Peanut butter and bananas and I go way back.  I remember being a little girl and my grandma would feed me mashed bananas swirled with a bit of peanut butter.  As I got older, I ate that in little sandwiches inside of saltines.  Well nowadays, I still eat little sandwiches but they are ice cream sandwiches made with these cookies.  Seriously, try putting a scoop of vanilla ice cream between these two (and maybe a drizzle of caramel) and you will see what I am talking about!

Ingredients

1 banana

2 Tablespoons Jiffy peanut butter

½ teaspoon vanilla

⅓ cup coconut flour

½ teaspoon truvia (optional if you feel like your dough needs to be sweetened)

 

 

Instructions

Preheat oven to 350º

Mash banana, and thoroughly mix in peanut butter and vanilla.

Add coconut flour and Truvia.

Mix well.

Separate into walnut-sized balls.

Place on a cookie sheet and flatten with a fork in the crisscross peanut butter cookie shape.

Place in the oven and bake for 10-15 minutes until cookies begin to brown slightly.

Remove from oven and let cool.
