I don’t know about you guys and gals but I’m a real sucker for sweet things. I love desserts, entrees, and side dishes that are packed full of sweet flavor. As far as side dishes go I don’t think you can get any sweeter than sweet potato and pineapple casserole. Some folks like to use yams in this dish. Did you know that yams and sweet potatoes are two different things? I didn’t know that for the longest time. It’s amazing what you can learn by doing a little research.

Anyway, this casserole is different than traditional sweet potato casserole because it contains pineapple. I love pineapple and I love eating it in this yummy side dish. The textures and flavors going on in this casserole are heavenly. You’ve got the rough sweet potatoes, chunky pineapple strands, and creamy butter and marshmallows. Oh my goodness, everyone needs to try this delicious side dish at least once. Another thing that I adore about this recipe is how easy it is to make. There’s really not a lot of hassle that goes into it and it bakes up fresh and tasty in under an hour.

Quick Tip: This recipe is for yams but you can easily use sweet potatoes, too.
