Possibly the best cookie recipe we’ve EVER tried.

When I was a kid, the most common cookie that Mom baked was chocolate chip. We had it almost every week. Mom always said they were her emergency guest food. I grew up loving chocolate chip cookies. I always had a piece with me for lunch. It served as my dessert almost every day. There are a lot of new versions of chocolate chip cookies, and most of them involved a couple of new ingredients. These ingredients often change the taste of the chocolate chip cookies. Some were acceptable, some were not.

I always try new chocolate chip cookies recipes for my family. Most of them were successful like the white chocolate chip cookies. Some, which I will not mention anymore, always ended up er… not eaten.

These almond butter chocolate chip cookies are among those recipes which are successful. My family fell in love with them on the first bite. They always get excited whenever I tell them I will make a batch of these.

How To Make An Impression On Your Dinner Guests

This beef Wellington recipe saved me from a dinner fiasco. Things happen unexpectedly, and if we’re not ready, we are always thrown off guard. Thank goodness for emergency recipes. My husband called me one afternoon, telling me that he would be eating dinner at home with his boss. They needed to talk about a project that he’s leading and our home was the “safest place”. My husband’s job wasn’t really dangerous per se, far from it actually, but it must have been a new venture.

It was around four in the afternoon and I was panicking. I needed to make a good dish that would look good and would taste good at the same time! And this beef Wellington recipe saved me.

I was able to make it while my kids were sleeping. It was a good thing I had store-bought puff pastry at home so I skipped the step of making homemade ones. I finished everything, including the dessert, at around 7.

They arrived at exactly 8. I was even able to prepare the house and got cleaned up. Adrenaline rush at its finest, I tell ya!

My husband and his two bosses enjoyed the Beef Wellington. His lady boss kept complimenting me and I had the decency not to blush. I was just glad that the emergency recipe had paid off!

Could I please have this every day of the week?

Soup is my favorite kind of comfort food. A hearty soup dinner at the end of the day is the perfect way to relax and unwind. Ask my husband and he will agree wholeheartedly. Busy weeks are inevitable most especially during the peak seasons. And during those days, my husband rarely came home with a relaxed smile on his face. Usually, all he could offer was a tired smile, and that’s just because he wanted to give his family something nice.

During these weeks, the best way I can help him is to make sure he has something nice to eat when he comes home. Something not heavy because after eating, he usually falls asleep immediately. It’s not healthy to sleep with a full stomach. I usually prepare soup. He loves soup because it relaxes him and makes him feel warm all over. It’s also light on the stomach even if I prepare a rich soup.

This broccoli cheese soup recipe is perfect for that. This beautifully creamy soup will make everyone fall in love with it – even the picky eaters who are usually not that fond of broccoli!

I know what we’re having for dinner tonight!

Now I understand why my sister-in-law’s chicken stroganoff is a household name. I was able to finally taste it last weekend and I couldn’t forget how delicious it tasted! My brother was amused, but I knew he was proud too! Jenny and I often visit each other most especially when our husbands are away for work. While we both have our own work, they’re more flexible than our husbands so we had time to catch up with each other. Just last weekend, she visited me, along with her kids, so we could enjoy an afternoon with just as girls.

I baked walnut cookies for us and the kids. To make up for it, Jenny volunteered to cook dinner for us. We knew our husbands wouldn’t be home early that night, so Jenny and I would be sharing dinner. She cooked her famous chicken stroganoff. She put them all together right after I finished baking the cookies. So we were able to do something else while waiting for the slow cooker to do its wonderful magic.

By eight, I was able to finally get my hands on the dish that my brother kept boasting about! And now I knew why. Her chicken stroganoff is to die for. Jenny said it was an original recipe from her mom, but she just adjusted a few of the ingredients to suit the taste of her family.

What Are You Having For Dinner Tonight?

I don’t know how to get over this tasty Swiss chicken casserole. I made this a couple of nights ago because I wanted to serve something new to my family. One taste and we wanted to have it again for the next day! The good thing about my family is that when we love a dish, we will love it forever. I usually add that particular dish to my roster of food so that my family will get to experience the taste again and with a normal interval. This Swiss chicken casserole has just been added to that list.

My sons love this! They even eat the vegetables that I serve along with this. It’s not hard to please my sons, but I still feel like a good mother whenever they really enjoy what they are eating. It’s the same with my husband. I always want them to eat something nice and if I can, something nutritious as well. This chicken casserole gives the best of both worlds.

I can serve this with vegetables and my family will still eat it! What a really wonderful dish. You should make this for your family too!

You May Never Need Another Lasagna Recipe Again

Lasagna will always be the star of the show even if there is tons of food on the supper table. It’s a classic pasta dish, and classic pasta dishes are there at the top of the food hierarchy. My family loves pasta dishes so much, specifically lasagna; and they will be the first ones to line up for it. My recent lasagna recipe is a bit different than my usual version. Well, at least when it comes to how they look. I still followed the recipe of my Mom, but the method was different.

Lasagna rolls. Yes, that’s what I did for my last lasagna recipe. I just had to try it because I got curious. My husband even helped me make the lasagna rolls. Our kids were at the kitchen table with their art materials while the husband and I were at the kitchen counter, rolling lasagna. It’s a picturesque family photo, isn’t it?

My husband and I had fun making those lasagna rolls. I think it made a pretty good bonding activity for the four of us. It’s just that sometimes, the children would look at us as if they couldn’t understand why their parents were acting that way. Our kids also loved the lasagna rolls! It was a bit messy though because they were trying to unroll them, but yes, it was a hit to my family!

Quick Tip: After the noodles are done boiling, drain and separate them and then let them cool for a few minutes before rolling.

You’ll want to make this every day of the week!

Spicy food is starting to grow on me. While I still couldn’t take the super spicy ones, I find myself craving for something with a little heat on it. It’s my husband’s fault. He influenced me into eating such dishes. Whenever it’s his turn to cook, he makes sure he adds a little spice so that I will be used to eating it. Just recently, he cooked this amazing casserole that’s a little bit spicier than what I was used to. He told me that he toned down the spices a bit for me.

It’s a chicken casserole, a spicy chicken casserole. He told me he learned it from one of his friends when they were still teenagers. He had loved it since. What can I say? I really fell in love with it on the first taste! It’s chicken casserole, except that it has that kick that you didn’t know you were looking for in a casserole dish unless you tasted it!

My husband was so amused when I asked for another serving. I had a carton of milk beside me because it was a little spicy for my taste, but I still continued eating because I couldn’t help it! It’s extremely addictive!

Quick Tip: This recipe is fairly spicy but can be adapted for milder tastes by using mild picante sauce, mild tomatoes with green chiles, or decreasing the chili powder a bit.
