Growing up, my Nana always made tuna salad. I liked it, it was okay even though I wasn’t a fan of tuna. Then one day, we went to a family picnic and I found chicken salad! I was so happy; I can’t express to you how much! It didn’t have that fishy taste but all the flavor that I loved. Granted, I may have liked white albacore tuna salad but chicken has always been my favorite ever since.
I prefer to serve this over a bed of greens. It’s especially great in the summer when it’s so hot outside you just don’t want to cook over the stove, oven or grill. There are a few variations that feature grapes and other ingredients you can use. I think the basic, tried and true version is the best!
