Are you a meatball lover? I know that I sure am! I love eating them in a variety of meals such as in a sandwich, in soup, on a bun, and of course, in spaghetti. So, you can imagine my excitement when I came across this recipe for mini meatball casserole.

 

I was perusing the internet for an easy to-make meal for my family. It had already been a busy day and it was only 10am in the morning! That’s when Rhee Drummond’s mini meatball casserole popped up. Boy, am I sure that it did! It not only looks yummy as can be, but also super easy to make!

10 Minutes Of Prep Work Will Give You This Amazing Bake

Have you ever enjoyed a nice French Onion soup?  The gooey cheese over the top, the crispy onion topping, the depth of taste in the soup: ahh, so comforting and lovely.  This dish is something like that, but even more.  Add a few more ingredients and you’ve got quite a meal ready! Add some rice to the soup and make a comforting blend of mushy french onion soup.  No longer are you drinking a clear broth, but a thick and hearty meal to fill you up for the night.

The best part is that it has all the same flavors of French Onion soup, but it goes so much further than that. Add chopped chicken in there and it’s suddenly a great dinner for the whole family.

One of my picky eaters has never been a fan of French Onion soup, but he absolutely loves this bake. You know a dish is a success when he goes for his third helping!

Blackberries have never often been a part of my breakfast.  I usually only throw them in my yogurt or have a handful of them as a snack.  They just never tickled my fancy as breakfast food, until this.

 

This is yet another casserole baked dish that is oh so delicious.  This one, specifically, is so sweet and tasty it can be enjoyed as breakfast or simply as a dessert.  Either way, you are sure to love this with the creamy jam and cream cheese combination over the fluffy Pillsbury biscuits.  Mmm, good.

Cinnamon rolls.  Mmm, my dream whenever I would go to Pizza Hut as a child.  Was it just in my city, or did they have those cinnamon rolls at their lunchtime buffet everywhere?  I remember going to have pizza (cause what kid doesn’t love pizza?) but even more importantly, for those cinnamon roll desserts.  Yummm.

 

Ever since my childhood love of Pizza Hut cinnamon rolls, I can’t get enough of that treat.  They are so good in every way, shape or form.  And in this recipe, you’ll learn a new way, shape and form to make these. It’s SO much easier than making cinnamon rolls, yet doesn’t sacrifice at all on the flavor.

What a great idea this is.  I love this recipe for cinnamon chips and fruit salsa!  First and foremost, it’s really, really tasty.  Tons of big, juicy fresh flavors and such a neat way to present it.  This is another one of those recipes that as soon as I have it put together, I feel like an idiot for not having thought of it myself.  This is so good and simple.

 

And really fun.  I made this and took it to a casual neighborhood block party where there were tables of food that everyone had brought over (we have a cool neighborhood, obviously) and I would watch people look at it, maybe even pick up the spoon to dish some of it out before taking a closer look and realizing what it actually was.  And every single person smiled.  That’s pretty much perfect party food, right?

Quick Tip: I read through some of the comments for this recipe and someone mentioned using an egg slicer for all the fruits soft enough to push through, with is totally brilliant and which I am definitely doing next time.  Just remember to peel them first.

Sleep can be rare commodity.  Even in the lazy summer months, there are things to get up and get done and my kids like to get up at about 7am and jump on my bed.  The bed jumping doesn’t bother me.  I think it’s actually kind of great to wake up to giggly kids.  I would just rather that happen closer to 10am some mornings.  Most mornings.

 

Alas, whether you have a similar, child driven sleep schedule or an unforgiving work schedule or any of the million other reasons you might be lacking sleep, I think it’s safe to say that most people are tired most of time.  That’s why I like breakfast casseroles.  Make them ahead, put them in the fridge and then the next morning, you can get up, put them in the oven and maybe nap on the couch until that oven timer goes off.  And this Eggs Benedict casserole is one of my favorites.
