I’ve always loved chili. What could be more perfect on a chilly day than chili? The name says it all. My favorite variation is white chicken chili, and though I love the classic version I have to admit I prefer the chicken over the beef.

 

The light, spicy flavor is spectacular. This recipe has the seasonings spot on. I’ve had many versions but after this one I now have a favorite for home. Plus, whipped up in the crock? That’s so incredibly easy – it’s a win for sure.

I can’t lie, a whole ham only made it to my table at the holidays in the past. That all changed when I came across this recipe for the Best Crock Pot Ham. Anytime I see something labeled as “best” I take it as a challenge. After all, I’ve been around awhile and I know good food!

 

However, good for me and what’s good to my picky family’s standards are two entirely different things. I have to say, this ham is definitely GOOD for all of us! The sweet and tangy flavor is spot on perfect. I couldn’t stop picking at the thing even after I ate and was stuffed.

Two of my most favorite flavors in the world are raspberry and chocolate. I know I am not alone in this!  Put them together and you have an unstoppable dessert. That’s just what this brownie recipe does.

 

At first glance I thought this recipe would be difficult to make, but it’s actually quite simple. Anyone will be impressed and happily toss several of these in their mouth. Whomever you’re spoiling, let them indulge in a guilty treat – they’ll love you for it.

I made these for no other reason than I was craving them. Man am I glad I did! They were perfect after dinner, and with coffee in the morning, too.

Never underestimate the power of chocolate. This was a great recipe that I made for a bake sale. They sold out before anything else!

Ingredients

 

Brownies

4 oz Hershey unsweetened baking chocolate

¼ cup Land O Lakes butter

¼ cup Wesson canola oil

2 Eggland’s Best eggs

¾ cup Truvía™ Baking Blend

2 teaspoons vanilla

½ cup Gold Medal™ unbleached all-purpose flour

Coulis

2 cups Cascadian Farm™ frozen organic red raspberries (from 10-oz bag)

½ teaspoon Truvía™ Baking Blend

Frozen (thawed) sugar-free whipped topping, if desired

I had company coming on a whim, and I was strapped for dinner that night when they arrived. So like any smart and savvy cook I did a quick internet search for “easy and impressive meals.” To my surprise it actually yielded some great results, and I ended up choosing this Caprese Pasta Bake. I am SO glad I did! Not only were my guests raving over it, I thought to myself, “wow I can whip this up any day of the week in no time!”

That is a priceless discovery! As a busy mom, working from home and trying to take care of my family, quick and easy dinners are such lifesavers. But somehow I had gotten stuck with about 5 different recipes – all very tasty, but no-one wants to eat the same thing every other night… This recipe will definitely be added to my favorites! Be sure to serve with warm bread, it was absolutely perfect together.

I am a lover of all dishes Mexican. I love the heat, the spice, the tender meat or stringy cheese… I love dipping chips in whatever falls out of my tacos, burritos or enchiladas like these. Yep, I’m in foodie love.

 

This version of enchiladas is the sour cream and cheese sauce, which is to die for. It gives a whole new dimension to the dish, and usually features tomatillo salsa. I approve whole-hearted, and if I had a dish of these and the version with red sauce I don’t know which would be my favorite.

I love squash of all kinds. Cook it up in the oven, smother it in butter and dig in. That was the way I always made it but then I began to discover new ways that it could be cooked up and enjoyed – and it’s been heaven.

 

This recipe combines yellow squash with stringy cheese, breadcrumbs and a bit of spice. I’ve never had it this way but it blew me away! I beg you to try this before you waste any more time. Sure, the buttered and baked version is awesome too, but you can never have too much squash.

Never have I enjoyed seafood more than I do living down south. It’s fresh, it’s available and it’s definitely a part of my weekly dinner lineup. Now I’ve done biscuits and gravy, and biscuits with chicken but this shrimp chowder with biscuits on top is a new one for me.

 

This recipe was fast, flavorful and it didn’t even matter that it was the heat of summer. I was diving in and enjoying every bite! Chowder isn’t just for cold days y’all!
