Let’s kick up that southern cornbread a bit, shall we? True that it stands on its own, but when you add these extra ingredients to include cottage cheese, diced chiles and honey you create something so unbelievably good that you’ll want to stand up and declare independence from the old version. I nearly got up on my chair and said, “I’m really impressed, and I’m not going to take it anymore!” I was afraid that my dog and cat may think I’m crazier than they already do, though.
The rest of my family enjoyed it too, although my daughter was picking out the “little green things” out of hers. She still ate it though, so whatever works! I served it with some real butter and it was the perfect side for our enchiladas. I’d actually like to incorporate this recipe with a tamale casserole! Can you imagine? I think the possibilities are endless.
