I’ve been to a few Cajun festivals in my time, and even had friends from Louisiana cook up some amazing dishes like Jambalaya and Dirty Rice. Creole is another one of my favorites and it’s never quite right when I attempt to make it, that is until this crock pot recipe which I put in my recipe tin IMMEDIATELY upon eating the first bowl. That’s how good this recipe is! The whole family agreed, it had just the right amount of spice and the shrimp were the perfect consistency.

 

It’s rare to come across a recipe that has everything like the authentic version. I felt the same way about my slow cooker carnitas recipe. So, it was a happy night in the household and we all finished dinner feeling more than satisfied. I suggest putting some creole spice on the table, or at least some Old Bay so that those who like extra spicy can sprinkle it on, but I thought it was amazing without.

The flavors of watermelon on its own are already amazing. That crisp, lightly sweet and juicy fruit has everyone wanting more and more, and it’s a necessary BBQ or picnic side. However, just when you thought it couldn’t get any better, along comes mojito watermelon. Mojito and its fresh, minty flavor combined with that classic watermelon flavor is enough to throw anyone for a loop. Anyone who tries this will be blown away, guaranteed.

 

It’s actually fun to see anyone try a bite, as the flavor is a surprise to them. My family could see the bits of mint on the watermelon but I don’t think they were prepared for this. While we still love basic watermelon, who doesn’t? It’s still fun to try something new. I actually can’t wait to bring this to a family function and see what everyone else thinks of the fresh, new flavors it has.

I don’t know why but whenever I make a “mini” of something my kids eat it like it’s a prize. I have my go to meatloaf recipe, but I was willing to give this one a go simply because they were mini. I had a little fun and told them we were having meatloaf for dinner. I got the usual response of unenthused, and my daughter said that she would make Ramen for dinner. I happily went about my preparations eager to see what the reaction would be. Just as I expected, she exclaimed, “aw those are so cute!” My son asked if he could still eat his with ketchup.

 

Overall they were a hit! I still like using Lipton Onion Soup Mix in my meatloaf, and I may incorporate that next time. Still, the flavor was there and we all enjoyed them with a side of garlic mashed potatoes.

I am admittedly a huge fan of zucchini and I’ve had it many ways to include baked, sautéed and of course fresh from the garden. I am always in possession of a ton of this vegetable as it’s very hearty and easy to grow. I was floored at the thought of grilling it and excited to see what flavors it would have. It carried the grilled taste that I adore, and was still very lightened up and fresh tasting. I could easily eat this as a main course, but I understand that everyone isn’t the same so at the very least, you have to try it as a side.

 

I actually found myself mixing my pieces of zucchini with my potato salad, it was a great combination. However you eat it, you will be all in with this smoky, zesty flavor of the zucchini that’s like no other way you’ve had it before. I may never have it the old ways again, that’s the truth!

Why not go for it? That was my first thought when I saw the recipe for these beer battered hush puppies. I have loved these little suckers since I was little! My Gramps used to take me to a popular seafood chain restaurant for lunch dates and he’d give me his hush puppies. They were my favorite! I also had chicken instead of fish, but that’s another love story. I am all about whipping up my favorite childhood treats and I knew these would be more than indulgent, but I also knew they’d get eaten up real fast.

 

Happily, they were really easy to make. Even happier everyone was in love. The beer batter made them better than the versions I’d had prior. The satisfied my cravings with ease and I now know that I don’t need to go to a fast food place to get an order. I can make them at home and maybe, just maybe they are a bit healthier even though they definitely taste sinful.

I am an easy summer salad fan. I love the fresh, cool taste that comes along with each and every one. Macaroni salad was always my favorite as a child, and my mom was sure to make up a batch of it along with her favorite potato salad. I truly didn’t think it could get much better, but then again I never thought of adding avocado. My love for that fruit which is more like a vegetable in my book is a whole different story. I could eat avocado as is, with no seasoning or anything. I love it that much.

 

That’s probably why this salad was over the top for me. The moment I saw the recipe I knew it’d be a hit with me, and maybe the family. In all honesty I wasn’t against eating it for days if they didn’t like it. Unfortunately, they did and I had to share.

Do you ever wish you could go back to being a kid?  Think about it, kids have little responsibilities and they do everything with full on heart and joy.  I think this carries over to eating.  My kiddos love to dip their food and they do it so joyfully.  Eating is a full on game and dippable things are a hit in our house.
