Unless you eat outside every day, there’s no reason that vegetable soup can’t be enjoyed on a hot day. It’s hearty, full of nutrients and tastes phenomenal. I’ve never been one to avoid soups in the summertime because, well, they go great with sandwiches!

 

Vegetable soup is an all-time favorite for me. Even my family eats it with no complaints. The best part about cooking it up on the crock is you have plenty to last through the week. I usually add a splash of Frank’s Hot Sauce to mine, and some crushed saltines – yummy!

You’ve heard someone say “complete meal” before but never have you experienced a combination like this all in one casserole. We’re talking tender, juicy chicken, roasted cauliflower, mushrooms and my favorite – wide egg noodles swimming in a sea of the most perfect seasonings ever.

 

My husband is a meat and potatoes guy – self-proclaimed. Nothing makes him happier than a slab of beef and a huge baked potato. However, he is a sport and tries my dishes because he knows that first off, I’m a good cook. Secondly, what’s on the table is dinner so it’s eat or starve. That being said, he really liked this casserole and had two heaping platefuls!

Well, it’s decided! These refried beans are going to be our special dish we take to all our friends’ parties this football season. They’re that impressive! You know when you’re so incredibly stuffed but there’s one thing you can’t stop eating? That’s these beans.

 

We made a huge Mexican feast with my famous rice, some sour cream enchiladas and these beans. I could not stop dipping chips in it. I even got a second helping and then I told my husband he was going to have to roll me to bed because I could not move! Do yourself a favor and try these. You will not be sorry!

At first glance when I came upon this recipe I was thinking okay, my family will eat this they do broccoli. Then when I saw the Ramen included I knew for sure they’d be thrilled. What could be more beloved than Ramen noodles?

 

It always excites me when I find a unique dish, sometimes it’s a hit and other times it falls flat. This one was an easy winner. I am planning on grabbing some rotisserie chicken next time and adding it in so I have a complete meal. Either way this was packed with flavor and gone within a half hour.

I can’t lie, chocolate is my weakness! Dark chocolate is actually good for the heart but even if it wasn’t I’d indulge regularly. There’s something soothing about that soft cocoa melting in your mouth. It’s like any time of day perfection. Mornings it wakes you up, afternoons it helps you escape and evenings it ends your day just right. It may sound silly but I honestly think my life wouldn’t be the same if I gave up chocolate completely.

 

I know there are people who will say chocolate is bad for you and you should choose a carrot instead… As much as I love carrots and all kinds of veggies, there’s nothing like a good chocolate fix every now and then. Preferably every other day, at least!

 

My mom and I used to share a candy bar every now and then. She was a single mom so we couldn’t always afford one each, but sharing that bar together is a memory I’ll never forget. Thankfully, these little guys are something I can whip up and share with my daughter for those sweet memories.

I love my chicken noodle soup any day. It’s great for dipping grilled cheese in, goes awesome with crackers and is perfect for those days you don’t want a big, heavy meal. I feel the same about this casserole. It’s like everything the soup is but with no broth.

 

Actually, when I was little I used to get spoonfuls of soup with a slotted spoon so I could just have veggies, chicken and noodles. This dish makes that easy to accomplish without leaving the rest of the family with just a bunch of broth!
