Ham It Up With Healthy Cordon Bleu Chicken Bake!

When I was a little girl I can remember spending a lot of time with my grandparents as they were quite old and needed a lot of help.

Every day, my mother would either load us up into the family car or we would walk across town to my grandma and grandpa’s house for a visit. My mother would typically make them supper but during the day at lunch time my grandparents would participate in the Meals on Wheels program. I always thought this program was so special because it meant that someone out in this world, other than my family, cared that my grandma and grandpa had a decent meal in their bellies.

A lot of the time, grandma and grandpa would share their lunch with me and my sisters even though my mother would yell at us and tell us not to eat all of their food. Grandma always hushed my mother and told her she liked to “feed her grandchildren.” On Tuesdays, the Meals on Wheels folks would bring Chicken Cordon Bleu and I remember it tasting so yummy!

My mom told me she wasn’t going to make the Cordon Bleu the traditional way but she would make it into a casserole. Mom sure did love her casseroles. I think she’d make a casserole into a casserole LOL Enjoy this lovely recipe 🙂

When it comes to casseroles I’m all in. I love how all the ingredients intermingle with one another to create a hot and savory meal fit for royalty…or my family lol! Anyway, this chicken cordon bleu is a lovely spinoff of the traditional and classic meal. It has hints of the yummy sandwich in there as well. If you are seeking out a filling meal that is easy to throw together for a weeknight supper you’ve found it!

My husband and kids really enjoyed this chicken cordon bleu casserole, which made me insanely happy. It’s very hard to find a meal that everyone likes simultaneously. I also have a brood of picky eaters in my charge and sometimes dinner can be a nightmare. Not on chicken cordon bleu casserole night!
